The curved blades are sharpened on both sides, allowing for carving in both directions- pushing and pulling so that as the grain changes, you do not have to turn the piece. The general bent knife has a blade bent with an ever decreasing radius of curvature all the way to its tip. This is the most versatile type of bent knife.
